Cranberry Mostarda

INGREDIENTS

  • 1/3 cup white wine
  • 1/3 cup sugar
  • 1/3 cup minced shallots (about 1 large shallot)
  • 2 tablespoons yellow or black mustard seeds
  • 1 pint Ocean Spray® Cranberries
  • 2 teaspoons mustard powder
  • 1 pinch salt
  • 1 teaspoon mustard oil
  • 1 pinch Aleppo chili flakes (substitute any red chili flake)

DIRECTIONS

In a heavy-bottomed sauce pan, combine the wine and sugar and simmer 3 minutes, or until the sugar is dissolved. Stir in the shallots and mustard seeds and simmer 5 minutes. Stir in 2/3 of the cranberries, along with the mustard powder, and simmer until the berries begin to pop. Remove from the heat and stir in remaining berries and mustard oil.
